Yum : Grilled Zucchini Wraps

Grilled Zucchini Wraps

I made these wraps last night for dinner and wow-we, what a success!

Grilled Zucchini Wraps

  • 2 tbs olive oil
  • 2 garlic cloves, finely chopped
  • 2 long zucchini, trimmed, quartered lengthways
  • 1 cup peas
  • 80g marinated feta, drained
  • ¼ cup thick Greek-style yoghurt
  • 2 spring onions, finely chopped, plus extra thinly sliced on an angle to serve
  • Finely grated zest and juice of 1 lemon
  • 4 butter lettuce leaves
  • 4 flour tortillas, lightly chargrilled
  • ½ cup mint leaves
  • 1 long red chilli, seeds removed, finely shredded

Method

  • Combine olive oil and garlic in a bowl
  • Bush zucchini all over with garlic oil and season with sea salt and ground pepper
  • Preheat a chargrill over high heat.  Add zucchini, flesh-side down, then cover loosely with foil and cook for 3 minutes or until lightly charred.  Turn and cook the other flesh side for a further 3 minutes (don’t cook the skin side, as it will burn)
  • Meanwhile, cook the peas in boiling salted water.  Drain, set aside one-third of the peas, then roughly crush the remainder with a fork
  • Combine crushed peas with drained feta and yoghurt in a bowl.  Add spring onion, lemon zest and lemon juice, to taste, then season well
  • To serve, place a lettuce leaf on each tortilla, top with pea mixture, then place 2 wedges of zucchini on top.  Scatter with reserved peas, mint leaves, chilli and extra spring onion, then roll up tightly to eat.
  • Serves 4 as a side.

* I omitted the chilli and spring onions as we had these with Poppy and James.  James devoured his wrap and made lots of mess, whilst Poppy liked it but needed a little encouragement to finish hers before she could have fruit salad!

Poppy’s Perspective

I recently downloaded my Canon IXUS camera (my little point and shoot) and found all these photos that Poppy had taken on our recent trip to Melbourne.

I love seeing the city from her perspective in the stroller and what she captured … unbeknownst to me as I was too busy shopping!  Xx

Patagonia ♥

I am a marketers dream as I am extremely brand loyal.  Once I find a brand/product that I am happy with, I am all yours.  One product that I have been loyal to for over 20 years is Patagonia – makers of all things outdoor.

I started wearing their gear when I was living in Canada in the early nineties and still have some of that gear, 20 years later!  My trusty Patagonia down jacket is still going strong after a decade of solid wear.

Patagonia Down Jacket

Patagonia began life in 1973, a thousand feet up, clinging to the side of El Capitan.

It was there that Patagonia founder, Yvon Chouinard, noticed the once-pristine face of the mountain was being pockmarked by thousands of steel pitons being driven into it – the very same steel pitons he was manufacturing in his tin shed in Ventura. Here was a mountain eternal and grand that had stood staunch for 100 million years, a mountain that should last the best part of forever, being flaked away into gravel. The symbolism of the moment set Yvon upon a lifelong mission to prove business can indeed have a simpatico relationship with the natural world.

In the years since, Patagonia has evolved into an enterprise with a wholly unique philosophy, a way of doing things, a way to see the world and our place in it. Today Patagonia is still up on the mountain, but also lives in the oceans and forests, on trails and beaches, all the places where people seek adventure and discovery.

Patagonia gear is designed for exploring, embracing and challenging the frontiers. It’s gear designed for simplicity and utility, gear designed to last, and gear accountable to the environment it’s made for.

The love of a wild and beautiful world comes with an obligation to preserve its wilderness and beauty, and Patagonia is committed to this. It always has been. We donate our time, energy and 1% of all sales to like-minded, grassroots environmental groups who are out there working to keep the natural wonder in the world.

I was cleaning out my cupboards the other day and found a big stack of old Patagonia catalogues dating back to 1994!  ‘Old school’ outdoor gear that featured a lot of green and purple, high-waisted shorts and antiquated technology, but I still loved having a look through all the photos and remembering what I was doing when I first saw these great images.  Whether it was working as a cable-car operator, ski-lift operator or a bushwalking guide the photos always resonated with me, especially the ones featuring children enjoying the outdoors with their parents.

Now in my 40’s I have realised that my dreams of having an outdoors family have indeed come to fruition and I feel blessed that Nick and I have been able to expose Poppy and James to our outdoor world in Tasmania.  Here are some of my favourite photos that I drooled over many moons ago.

More Summer Fun

SailingAh … summer holidays, oh how I love them.

We have been spending more time out on the water and went sailing last Friday to watch the King of the Derwent yacht race … two brothers, two sister-in-laws, one uncle, one yacht, whilst four grandchildren were with two grandparents at home.  Booom!

I reveled in the tranquility of being out on the water with just the wind to guide our way (and not worrying about James on board).

Saturday was oh so hot and we escaped the city early in the speedy boat to meet up with Nick’s folks and his brother’s family for some good ‘ol fashioned beach time.  Sand castles, collecting shells, frisbee throwing, swimming and the boys even went water skiing.

Early evening we popped down to the Taste of Tasmania for a Tea Cup ride, some fish and chips and a Big Bessie ice-cream!  Yum.

New Years Day - 2007

This photo of Nick and I was taken on the 1st January 2007 after we had just met.  Eight years later to the day, we are still loving the vibe of Hobart at this time of year, but now have a couple of extra spectators in tow!

Happy New Year!

Another year has ticked over and we were out on the water in Hobart last night with Nick’s brother Will, his wife Tup and Poppy’s cousins Maggie and Lily.  The sunset over Mt. Wellington was divine, as were the oysters and sushi we had on board!  The fireworks weren’t too shabby either!

Over the past couple of days we have also spent time at The Taste of Tasmania, with and without Poppy and James.  This is one of my favourite times of year in Hobart as we see our gorgeous city transform into a city full of yachties, travellers and foodies from all parts of the world.

Wild Oats XI Welcome

Wild Oates IX

Hobart certainly turned on the welcome for Wild Oats XI as they sailed in to accept their first line honours in the Rolex Sydney to Hobart Yacht Race on a perfect Sunday afternoon.

We were fortunate to be out on the water with Nick’s parent’s where we enjoyed a relaxing lunch at Maryanne’s, awaiting the spectacle to begin.  We then entered the craziness of the flotilla, managed a wave from the crew and then were spat out into the ‘washing machine’!  Boy are those maxi yachts fast?

Poppy was holding on, James was safely asleep in his bunk and we were on cloud nine with all the excitement.  Helicopters flying overhead, pleasure craft everywhere and thousands of people lining the shores to see these sailors cruise through to their eighth win!  Fabulous.

Here is a video of our experience!  Xx

Christmas Day Camping

Christmas Day Camping

I love Christmas Day.  I love it even more now that we have two little peeps that also get super excited about this festive time of year!  Poppy was up early, eagerly awaiting to see what Santa had brought her.  Ah the thrill of watching them peer into their stocking to find exactly what they had asked for (fancy that) … a Barbie car, another Barbie and a mermaid.  I also felt a little twinge of pressure as we are now locked into the ‘Santa secret’.

After the craziness of unwrapping all the gifts with paper spread all over the living room, we loaded up the car with two children, their new toys, camping gear, food and the dog and headed two hours north to my sister and brother-in-laws farm at Bracknell.  We were hardly out of Hobart when Poppy and James were fast asleep – obviously the whole excitement became too much to bear!

We arrived to the welcoming view of Drys Bluff and a beautiful paddock of peas next to a flowing creek … it was a perfect setting for the gathering of the Gibson clan.  The cousins swam, the grown-ups chatted and ate, we opened more presents, we laid in the sun, were intrigued by the drone, we pitched our tents, we ate again and sat by a fire sipping Baileys and telling yarns.  It was a special day.

After a restless night (James apparently doesn’t like camping) we woke to another blue-bird day.  After a hearty breakfast (more food?), totem tennis, frisbee and packing up, we returned to Hobart to set up Poppy and James ‘big’ present – their trampoline.

Boy oh boy – Poppy has almost bounced her way into the record books, but she sure has slept well!  I hope you all had a very Merry Christmas? xx

It’s a Wrap

Salamanca Market Book

I saw this poster on Facebook recently and had a little chuckle.  Our Christmas tree definitely resembles “With a Toddler” and is looking decidedly sparse on the lower branches.  I keep finding broken baubles scattered behind furniture and in other random places.

Christmas Tree

I haven’t been game to pop any presents under the tree as James would have a field day – placing them high on the sideboard instead, safely out of his inquisitive reach.

Here is my wrapping choice for this year – I love these colours together and should put me in healthy contention for the Wrap off this year!!?
