I was hoping to post a savoury recipe this week, but I haven’t made any interesting meals. Meat and three veg tend to be a bit of a staple around here. Boring I know!
So today we have more ‘sweety treats’ – a delicious dessert that is very naughty.
Sticky Date Pudding
- 170 g dates – stoned and chopped
- 1 tsp bicarbonate soda
- 300 ml boiling water
- 60 g butter
- 170 g castor sugar
- 2 eggs
- 170 g self-raising flour
- 1/2 tsp pure vanilla
Sauce
- 400 g brown sugar
- 1 cup thickened cream
- 250 g butter
- 1 vanilla bean – split
Method
- Pre-heat oven to 180c and butter an 18 cm square cake tin or similar
- Mix dates and bicarbonate of soda. Pour over water and leave to stand
- Cream butter and sugar, then add eggs one at a time, beating well after each addition
- Fold flour in gently, then stir in date mixture and vanilla and pour into prepared tin
- Bake in centre of oven for 30 – 40 minutes until cooked, when tested with a skewer
- To make the sauce, bring all the ingredients to a boil. Reduce heat and simmer for 5 minutes
- Remove vanilla bean
- Pour a little sauce over warm pudding and return to oven for 2 – 3 minutes so sauce soaks in
- Serve pudding and pass extra sauce.
