Yum : Gado Gado Spicy Peanut Sauce with Vegetables

Now that summer is here we have been enjoying beautiful salads and fresh veggies for our evening meals.  This recipe is a ripper – try it out!

Gado Gado Spicy Peanut Sauce with Vegetables

Sauce

  • 2 medium onions – chopped small
  • 2 – 3 cloves of garlic – minced
  • 2 tbsp butter or oil
  • 2 bay leaves (remove before serving)
  • 2 tsp fresh ginger – grated
  • 2 – 2½ cups of water
  • 1 cup natural peanut butter
  • ¼ cup fresh lemon juice
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1 tsp soy sauce
  • ½ – 1 tsp sea salt
  • ¼ tsp cayenne red pepper to taste

Method

  • Saute the onions garlic, bay leaves and ginger in the butter/oil until slightly tender – about 2 – 3 minutes
  • Add the remaining ingredients, mix thoroughly and simmer on the lowest possible heat for 30 – 35 minutes, stirring occasionally

Serve Over

  • 2 cups shredded cabbage – raw or steamed
  • 1 cup raw carrot – grated
  • 1 cup raw celery – sliced
  • 1 cup marinated tofu chunks
  • 3 – 6 hardboiled eggs – sliced
  • 3 tbsp toasted sunflower seeds or nuts
  • 3 cups mixed steamed vegetables – broccoli, zucchini and/or mushrooms etc.

Method

  • On a large platter arrange a layer of raw ingredients, then one of steamed, the egg slices and tofu and nuts or seeds.
  • Top with the sauce and enjoy!

I actually halve this recipe as it makes enough for 6.  I also add chicken sometimes too!

    Great combination of ingredients, cold, steamed, crunch and chew!
