Another salad for you this week – we make this on a regular basis as it is so delicious:
Sweet Potato, Smoked Chicken, Bocconcini and Rocket Salad
- 2 sweet potatoes, peeled and diced into 2 cm cubes
- oil
- salt and freshly ground cracked pepper
- 6 – 8 bocconcini, halved
- 2 smoked chicken fillets, sliced
- 100 g wild rocket
- 75 g semi-dried tomatoes
- 80 g (1/2 cup) toasted pine nuts

Classic Salad Dressing
- 1 tbsp red wine vinegar
- 1/2 tsp Dijon mustard
- salt and freshly ground black pepper
- 60 ml (1/4 cup) extra-virgin olive oil
Method
- Preheat oven to 180 C
- Toss the sweet potatoes with oil, salt and pepper and roast in the preheated oven for 20-30 minutes, until tender. Set aside to cool
- Place the sweet potato, bocconcini, smoked chicken, rocket, tomatoes and pine nuts in a large bowl. Toss with dressing to serve.
- Mix all dressing ingredients together and whisk well.
