Yum : Sweet Potato, Smoked Chicken, Bocconcini and Rocket Salad

IMG_9062 Another salad for you this week – we make this on a regular basis as it is so delicious:

Sweet Potato, Smoked Chicken, Bocconcini and Rocket Salad

  • 2 sweet potatoes, peeled and diced into 2 cm cubes
  • oil
  • salt and freshly ground cracked pepper
  • 6 – 8 bocconcini, halved
  • 2 smoked chicken fillets, sliced
  • 100 g wild rocket
  • 75 g semi-dried tomatoes
  • 80 g (1/2 cup) toasted pine nuts
  • Classic Salad Dressing

Classic Salad Dressing

  • 1 tbsp red wine vinegar
  • 1/2 tsp Dijon mustard
  • salt and freshly ground black pepper
  • 60 ml (1/4 cup) extra-virgin olive oil

Method

  • Preheat oven to 180 C
  • Toss the sweet potatoes with oil, salt and pepper and roast in the preheated oven for 20-30 minutes, until tender.  Set aside to cool
  • Place the sweet potato, bocconcini, smoked chicken, rocket, tomatoes and pine nuts in a large bowl.  Toss with dressing to serve.
  • Mix all dressing ingredients together and whisk well.
