Ok, I admit it – I have a weakness for chocolate! I figure I could be addicted to much worse. I love these cookies but the temptation to sneak my little hand into the cookie jar is far too great, so I try not to make them that often.

Chocolate Chip Cookies
- 125 g butter – softened
- 1/2 tsp vanilla essence
- 1 cup brown sugar
- 1 egg
- 1 cup plain flour
- 1 cup self-raising flour
- 1 cup shredded coconut
- 250 g cooking chocolate (Plaistowe Milk)
Method
- Place butter, vanilla extract and sugar in a bowl and beat until creamy
- Beat egg into mixture and then stir through flours, coconut and chocolate
- Roll 2 tablespoons of mixture at a time into balls and place onto lined baking trays and flatten slightly ★
- Bake in a pre-heated oven (190℃) for 15 minutes, or until cookies are lightly browned
- Cool on trays. Makes 20
★ Sometimes I don’t have the time (or inclination) to roll the mixture into cookies, and so I place it in a tray, lined with baking paper and flatten out. As soon as I remove the tray from the oven, I cut into slices. Lazy I know, but they still taste the same! x
